Chicken Pakoras

Ingredients

  • 500 gm boneless chicken (thigh or breast)

Marinade:

  • 2 tsp amchoor (dry mango) powder

  • 2 green chillies (chopped)

  • 2 tbsp coriander leaves, chopped

  • 1 tsp red chilli powder

  • 1 tsp cumin seeds

  • 1 tbsp ghee

  • 1/2 tsp salt



Besan paste:

  • 1 1/2 cup besan (chickpea flour)

  • 3/4 cup water

  • 1/4 tsp ajwain (carom) seeds

  • 1/4 tsp red chilli powder

  • 1/4 tsp turmeric powder

  • 1/4 tsp baking powder

  • 1/2 tsp salt

  • oil for frying

  • chaat masala as needed

  • lemon wedges as needed

Instructions

  1. Cut the chicken into small pieces

  2. In the same bowl, add the powdered spices, cumin seeds, chopped coriander leaves, green chillies, salt and ghee.

  3. Mix to marinate well. Set aside for 20 mins.

  4. Make a thick batter of besan, ajwain, turmeric powder, red chilli powder, salt, baking powder with water. Whisk until smooth.

  5. Heat oil to medium heat.

  6. Dip the pieces of chicken in the batter and deep fry until golden brown and crispy.

  7. Remove from oil and place in dish lined with paper towel.

  8. Sprinkle with chaat mala and serve with lemon wedges.
