Vegetable Hot and Sour Soup

Ingredients

  • 3 tbsp Oil

  • 2 tsp Garlic chopped

  • 2 tsp Ginger chopped

  • 3 tbsp Onion chopped

  • 1/4 cup Mushrooms chopped

  • 1/4 cup Broccoli chopped

  • 1/4 cup Beans chopped

  • 1/4 cup Carrots chopped

  • 1/4 cup baby cornchopped

  • 1/4 cup Capsicum chopped

  • 3 cups Veg Stock/Water

  • 2 tbsp Soya sauce

  • 1 tbsp Vinegar

  • a pinch of Pepper powder

  • 1 tsp Green chilli chopped (optional)

  • a pinch of Sugar

  • Salt to taste

  • 1 tbsp Chilli sauce

  • a handful Spring onion chopped

  • 2 tbsp Coriander stems chopped

  • 1 tbsp Cornstarch

  • a dash of Water

Instructions

  1. Heat a pan and add oil, garlic, ginger and onions. Stir them for a minute without browning them. Add in mushrooms, broccoli, beans, carrots, corn and capsicum. Cook them on high heat for 2-3 min.

  2. Add vegetable stock and bring to a boil. Drop in soya sauce, vinegar, pepper powder, green chilli, sugar, salt, chilli sauce and give another boil.

  3. Separately mix together cornstarch with a dash of water and add to the boiling soup. Once it is thickened remove and serve the soup hot.

Note: You can modify the vegetables to your taste
