Vegetable Hot and Sour Soup

Ingredients
3 tbsp Oil
2 tsp Garlic chopped
2 tsp Ginger chopped
3 tbsp Onion chopped
1/4 cup Mushrooms chopped
1/4 cup Broccoli chopped
1/4 cup Beans chopped
1/4 cup Carrots chopped
1/4 cup baby cornchopped
1/4 cup Capsicum chopped
3 cups Veg Stock/Water
2 tbsp Soya sauce
1 tbsp Vinegar
a pinch of Pepper powder
1 tsp Green chilli chopped (optional)
a pinch of Sugar
Salt to taste
1 tbsp Chilli sauce
a handful Spring onion chopped
2 tbsp Coriander stems chopped
1 tbsp Cornstarch
a dash of Water
Instructions
Heat a pan and add oil, garlic, ginger and onions. Stir them for a minute without browning them. Add in mushrooms, broccoli, beans, carrots, corn and capsicum. Cook them on high heat for 2-3 min.
Add vegetable stock and bring to a boil. Drop in soya sauce, vinegar, pepper powder, green chilli, sugar, salt, chilli sauce and give another boil.
Separately mix together cornstarch with a dash of water and add to the boiling soup. Once it is thickened remove and serve the soup hot.
Note: You can modify the vegetables to your taste
